Too hot to cook or just don’t feel like cooking? Tonight was a ‘No Cook’ night in our house.
A super quick and simple meal — tuna and cannellini bean salad. I love the creaminess of the beans.
What you’ll need:
- Tuna packed in oil, drained
- Cannellini beans, rinsed and drained
- Cherry tomatoes, cut into halves or quarters
- Fresh basil leaves, rinsed and chiffonade
- Extra virgin olive oil
- Fresh ground black pepper
- A pinch or two of sea salt
Combine all the items in a bowl and gently toss until well mixed.
If you don’t like tuna, you can use shrimp instead or some Italian meats such as Salami, Capocolla or Sopressata.
