Ground Chicken Fried Rice

Something different tonight. I usually make BBQ pork or SPAM fried rice. Tonight I used ground chicken.  Since I was on a roll with using something different, I went on to add green beans (cut small) and thinly sliced cabbage (say whaaat?) to my usual two Serrano peppers and one jalapeño and celery and scrambled eggs. The green onions are forgotten in the fridge. Oopsie.

Let’s eat! It had a nice spicy kick but I used a little too much oil so the rice was gummier and not as nicely separated and dry as I’d like. The Mister came back for thirds so I think he liked it.

I know, right? I thought I’d branch out. Now, back to my regularly scheduled SPAM.
