After looking in my pantry I decided to fix a mish mash of things and name it Fiesta Chicken & Beans.
I cut up chicken into chunks and browned it on STOVETOP HIGH until it was pretty much cooked.
Next I added one can of pinto beans (with juice), one can of diced tomatoes with habaneros (with juice), and 1/2 can of diced jalapeños. Into the pot I sprinkled a little chili powder, ground cumin and ground coriander (probably 1/4 teaspoon of each). I added about a 1/2 cup of water. Next I decided it needed some dehydrated onion so I poured a small mound in my palm and tossed it in too.
Cover and set to STOVETOP MED and let it bubble away for a 20-25 minutes. I had to go do other things so I set it to SLOW COOK HIGH until dinner (an hour or so).
Served over rice and sprinkled with finely shredded mild cheddar cheese. A flour tortilla and cerveza on the side.
What brand of beer is that Mrs. B? I don’t think that I’ve seen that before… that dish looks like something we’ll try too! Aloha
