Not wanting to waste the leftover flank steak, I decided to make a frittata with it. I also wanted to use my new 6″ Lodge cast iron skillets.
In a large skilled, I sautéed some Simply Potatoes diced potatoes with onion in a tablespoon of oil until they were done. Next I added the diced flank steak and a little bit of butter and gave it several quick stirs and let it brown for a minute or two. Next one large diced jalapeño went into the pan and everything hung out for another 2 minutes.
I spooned out the mixture into the cast iron skillets.
I beat 4 eggs with 1/2 cup of milk and poured it into the skillets. After topping them with cheese, they went into a pre-heated 350 degree Fahrenheit oven for about 10-13 minutes.
A little side of salsa and it’s time for breakfast!
YUM! I will remember that one for the next time we have some leftover steak… yeah like that ever happens in our house… 😀
