Breakfast Burritos Again

We love our breakfast burritos in this house.

Ingredients:

  • 1 large jalapeño, diced
  • Simply Potatoes brand diced potatoes with onion
  • Breakfast meat of your choice
  • 4 beaten eggs
  • Butter
  • 1 tbsp olive oil
  • Flour tortillas
  • Shredded cheddar cheese
  • Salsa or picante sauce

Set the Ninja 3-in-1 to  STOVE TOP MEDIUM, add olive oil and brown the potatoes.

Add the Jimmy Dean turkey sausage crumbles and cook an additional few min. I like Jimmy Dean pre-cooked crumbles since I’m pressed for time.

Turn Ninja down to STOVE TOP LOW. Add a pat of butter and toss in diced jalapeños and cook for 2 min.

Pour in the beaten eggs. Turn Ninja off and let the eggs cook with the residual heat. Scramble eggs until done.

For the tortillas: Place a damp paper towel on a plate & place tortillas on them making sure to cover them. (Important: Ensure the paper towel is both under the tortillas and on top….if you do this with no paper towel under them, the steam will make them too wet.)

Microwave for 45 seconds to warm and soften them.

Add the scrambled eggs, potatoes, sausage and jalapeño. Sprinkle shredded cheddar cheese, fold and eat!
