Chicken Adobo

The Mister had a craving for chicken Adobo. I need to get the exact old family recipe from his sister but in the meantime…


1 lb chicken, cut into cubes
3 oz apple cider vinegar
3 oz soy sauce
6 oz water
2 bay leaves
2 teaspoons peppercorns (whole)
1/2 teaspoon ground pepper
4 garlic cloves, minced
2 jalapeños, diced
1 medium onion, sliced into thin slivers

Combine all of the ingredients in a Ninja 3-in-1 or a slow cooker.


Cook on SLOW COOK HIGH for 3 hours.

I served it with fried rice I made with garlic, onion, red chili flakes and scrambled eggs. (Dishes like this don’t photograph particularly well.) 🙂
