Lunch on a Monday needed to be something just a little bit different.
Ingredients
2 cans (8 oz) tuna, drained well………….although I gave a quarter of a can to the cats 🙂
4 Tablespoons mayonnaise
2 Tablespoons Sriracha sauce
2 Tablespoons of rice wine vinegar
2 Celery stalks, diced
A few cucumber slices
Leafy lettuce
Bread of your choice
Combine in a bowl the tuna, mayonnaise, Sriracha sauce, rice wine vinegar and diced celery. Mix well. Cover and refrigerate for an hour or so.
Spread a nice thick layer of tuna mixture onto the bread. Top with cucumber slices and lettuce. One for her and one for him.
I think that I’ll make this sammie for our nephews, they’ll love it! (and what, where’s the Best Foods mayo? 😉 )
Ha ha! Funny you should mention…….I did actually use Best Food mayo but it was the last of the jar so it looked icky for a picture. This is the first time to buy Heinz. I hope it tastes ok!
