There are a whole lot of jalapeños on the menu today – I love jalapeños, this is a known fact. (There is a Ninja 3-in-1 pot full of Pork Chile Verde going and that will be posted later.)
We started the day with a breakfast omelette chock full of ’em.
2 eggs whisked with cracked black pepper and a dash of Tabasco. Chopped up some leftover smoked ham and diced jalapeño lightly sautéed in a drop or two of olive oil. Put it all together into an omelette…..and bury it in a liberal amount of Herdez Salsa Casera Hot.
I also made some Pico de Gallo to have on hand.
Start with some really fresh goodies.
What I used is:
3 Roma tomatoes, seeded and diced
2 jalapeños, diced
3 green onion sprigs, sliced
1 small onion, diced
Cilantro — I used Gourmet Garden Cilantro in a tube
1 tsp garlic powder
A dash or two of salt
Squeeze or three of lime
Combine the tomatoes, jalapenos, onions and garlic powder in a bowl. Squeeze a lime over it all and mix well.
The Mister can’t stand cilantro and I love cilantro so I split the batch and put cilantro in mine.
Refrigerate for at least an hour before eating.
