Salmon with Garlic Fried Rice

Dinner tonight — salmon fillet with garlic fried rice and a side of green beans.

2 Alaskan salmon fillets from Schwan’s, thawed
Fresh green beans
1 cup cooked rice
2 eggs, beaten
Zattarain’s Blackened Seasoning
Tamari Gluten Free Low Sodium Soy Sauce
Red pepper flakes
1 clove garlic, diced
Onion powder
Olive oil

Prep time: 5 minutes or so
Cooking time:  15 minutes

The salmon was drizzled with olive oil and a light sprinkling of Zattarain’s Blackened Seasoning. Into my Breville smart convection toaster oven it went set at 450 degrees Fahrenheit for 15 minutes.

While the salmon cooked I got the beans going. Fresh green beans were sprinkled with extra virgin olive oil, Tamari gluten free low sodium soy sauce and red pepper flakes. Heat the pan to medium high and cook the green beans until al dente.

Once the beans were going, I got started on the rice.

I added a few tablespoons of olive oil to a hot skillet and spread the cooked rice evenly. I added the diced garlic, soy sauce, onion powder and red pepper flakes and fried the rice.

Next I pushed the fried rice to the edges of the pan. This made a well to pour the beaten eggs and a nice clear area to scramble the eggs. Cook the eggs thoroughly. Once the eggs are cooked, mix them with the rice.

          Awwwuh, thank you so much! The Mister snarfed his down in record time. It really was super quick and easy and tasted very good. I was starving and wanted dinner on the table NOW.
