The Mister and I enjoyed at early dinner tonight at Carrabba’s in Colorado Springs (Springs has two Carrabba’s and we have none down here, an hour south! 🙂 ). I am glad they are within a reasonable driving distance.

Anyway, we have always dined at the one on Campus Drive and always have a good experience there and they didn’t let us down. Our waiter Mike K. rocked it. He was the perfect waiter — friendly, extremely personable, knowledgeable of the menu, fast, accurate and just the right amount of attentive. He also seemed truly happy to be a part of making it a great dining experience. Perfect!

The Mister and I both started with the Mama Mandola’s Sicilian Chicken Soup which is their signature chicken soup made in house with whole chicken, pasta and hand chopped veggies with a hint of spicy. We tried it for the first time on our last visit and fell in love with it. Quite delicious.

The Mister had the lobster ravioli (ravioli with tender lobster and romano in their white wine cream sauce, topped with diced roma tomatoes). He really really enjoys that one. Isn’t it just beautiful to look at?

I tried a new menu item and I think it’s my new favorite. I had the Tag Pic Pac (Tagliarini pasta in their housemade Picchi Pacchiu sauce of crushed tomatoes, garlic, olive oil and basil) and added chicken. The pasta was cooked exactly the way I like it and all the flavors blended together well and it was quite delicious. And piping hot. I do love my food piping hot.

Hi! Both choices look beautiful, but I’m loving me some of that there dipping olive oil.

Yes! The dipping oil was wonderful! I blame it for the 3 slices of bread that I ate.

Haven’t been to a Carrabas in a gazillion years. We’ll get there again one of these days. 🙂

    BTW, how’s the cats?

The cats are doing great! Rambunctious and healthy….and noise in the night. 🙂
