Seared Cod

Our second Blue Apron meal was enjoyed tonight — seared cod with spring vegetables & lemon-mustard vinaigrette.



  • 2 cod fillets
  • 10 ounces fingerling potatoes
  • 3 ounces radishes
  • 1 bunch asparagus
  • 1 lemon
  • 1 bunch tarragon

In that little brown bag labeled knick knacks:

  • 2 tablespoons butter
  • 1 shallot
  • 1 tablespoon capers
  • 1 tablespoon dijon mustard


  • Wash and dry the produce.
  • Trim off the ends of the radishes and slice thinly.
  • Cut the potatoes into 1/2″ thick rounds
  • Cut the asparagus into 2″ pieces, discard the big tree trunk part of the stem. 🙂
  • Quarter and deseed the lemon.
  • Peel and mince the shallot to get 2 tablespoons (save the rest of the shallot for another day).
  • Pick the tarragon leaves off the stems; discard the stems.
  • Pat the cod filets dry with a paper towel.


Bring a pot of water to boil. Add the asparagus to the boiling water and cook 1-2 minutes. While it’s boiling, fill a medium bowl with ice water and set aside.

After 1-2 minutes the asparagus should be bright green and slightly softened.. Using a strainer, transfer the cooked asparagus to the ice water to immediately stop the cooking process. Pictured are only half of the asparagus. Drain the asparagus and set aside.


Into the same pot of boiling water, add the potatoes and cook for 9-11 minutes.

In a small bowl, combine the shallot, mustard and the juice of 4 lemon wedges. Season with salt and pepper. Slowly whisk in 2 tablespoons of olive oil until well combined.


While the potatoes continue to cook, heat a nonstick skillet on medium high heat and add 2 tablespoons of olive oil. Salt and pepper the cod fillets and add to the hot pan.

Cook the fillets for 4 minutes on the first side. Flip and add the butter. Cook, occasionally tilting the pan and spooning the butter over the fillets. Cook for an additional 4 minutes.

I oddly did not remember to take photos of a lot of these steps. Oy! Whaddup widdat?!

The potatoes should be done by now. Drain thoroughly.

In a medium bowl (I used the same one used for the ice bath for the asparagus…emptying the ice water, of course) — combine the radishes, blanched asparagus, cooked potatoes, capers and tarragon. Add the vinaigrette and combine thoroughly.


We REALLY enjoyed this one.

The flavor was delicious, which frankly surprised me because neither of us are huge lemon or mustard sauce kind of fans but this, we really enjoyed this. The crunch of the radishes  and asparagus added a nice medley of textures and the vinaigrette was subtle.

There are about 520 calories per serving. We were both very satisfied with the portion size.

    Those are 2 really beautiful dinners, Mrs. Beans! And I’m so glad you and the Mister are enjoying. Better for us who want to read all about it!
    I had to overlook the butter and pretend there was none. No mustard, either. Or lemon juice. (I love lemon in what I may be drinking, but NOT ON, NOR ANYWHERE NEAR MY FOOD.) Oy. I’m getting hysterical.

      LOL! Right? I thought of you with the butter thing and we’re with you on lemon and mustard……but I had asked the Mister to “let’s just go ahead and try this without changing it” and am glad we did. I was really really surprised we liked it. And radishes. I’m not a radish fan (& neither is the Mister) but it was good! I found the Mister snacking on the radishes when I asked him to mix stuff up — he was my sous chef).

        Wow! Your palates are so much more grown up than mine is! I never would have even tried it. But I’m so jealous that you guys did. Look what you would have missed.

        Forgot to mention.. I love lemon in my household cleaning products.

    Isn’t that funny that they include the Butter in your box but not Olive Oil, you would think that they would. 😉

      Funny you should mention! The Mister cracked up over the inclusion of the butter and I had commented, “heyyyyy, no olive oil.” 😀

        Yeah, I can see not adding the S&P, but not every household keeps Olive Oil.
