Chicken & Basil Fettuccine

I have been looking forward to this meal ever since I first selected it and it did not disappoint. Delicious!



  • 8 ounces ground chicken
  • 8 ounces fresh basil fettuccine pasta
  • 3 cloves garlic — we used 5 because we love garlic
  • 1 red onion — we used 3/4 of it
  • 3/4 pound plum tomatoes which happens to be 2 large tomatoes
  • 1 bunch basil

Knick Knacks:

  • 2 tablespoons Mascarpone cheese
  • 2 tablespoons tomato paste
  • 1/4 cup grated Parmesan cheese


  • Wash and dry the produce
  • Peel and thinly slice the garlic
  • Peel and small dice the onion
  • Medium dice the tomatoes
  • Pick the basil leaves off the stems. Discard the stems. Give the leaves a rough chop


In a large non-stick skillet, heat 2 teaspoons of olive oil on medium-high heat. Add the ground chicken, season with salt and pepper. Cook thoroughly, breaking the meat apart with a spoon, 3-4 minutes. Transfer to a bowl and set aside.


Add 2 teaspoons of  olive oil to the pan and heat on medum heat. Add the garlic and onion, season with salt and pepper. Cook, stirring occasionally, 5-7 minutes. Add the tomato paste. Continue to cook, stirring frequently for 1-2 minutes.

Add the tomatoes and chicken and 1 cup water. Increase the heat to medium-high. Simmer for 12-14 minutes, stirring occasionally.


This is some really nice pasta.


While the sauce is cooking bring a pot of water to a boil. Add the pasta to the pot, gently stirring to separate. Cook 2-3 minutes or just until shy of al dente. Reserve 1/2 cup of pasta cooking water, drain the pasta thoroughly.


To the pan of tomatoes and chicken, add the cooked pasta, Mascarpone cheese, all but a pinch of the Parmesan cheese and half the reserved pasta cooking water. Reduce the heat to medium. Cook, stirring frequently to thoroughly coat the pasta, 1-2 minutes. Stir in all but a pinch of basil.


This was one of my favorite Blue Apron meals. Very delicious and the sauce was made out of just a few simple ingredients.  Before Blue Apron I never would have thought the quantities in this recipe would be enough but it was perfect. We both had plenty to eat and no waste!

There are approximately 635 calories per serving.
