Teriyaki-Glazed Meatballs 

Tonight dinner is brought to you by Hello Fresh. It was our first go with this meal-kit service. There was a lot of food. It was pretty tasty.

Hello Fresh has the most attractive packaging. All the ingredients for a particular meal are placed in a pretty box (the meat is kept separate).




  • 10 oz Ground beef
  • 2 Scallions
  • 1 thumb of ginger
  • 6 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon hoisin
  • 1/4 cup panko
  • 1 teaspoon corn starch
  • 4 ounces Red cabbage, shredded
  • 1 Carrot, shredded
  • 1/2 cup Basmati rice
  • 2 tablespoons white wine vinegar


  • Preheat the oven to 400° F.
  • Wash and dry the fresh produce.
  • Peel and shred the carrot.
  • The red cabbage arrived shredded — yay!
  • Peel and mince the ginger.
  • Thinly slice the scallions, keeping the greens and whites separate


In a small pot, bring 1 1/2 cups water to boil. Once the water is boiling, add the rice, cover and reduce to a simmer for 15 minutes.

In a large bowl, combine the cabbage, carrot, ginger, white wine vinegar and 1 tablespoon soy sauce. Toss and set aside to marinate. (I thought for sure I had captured a photo of this but apparently not.) 😦

Meatballs! We’re going to make meatballs! In a medium bowl, combine the ground beef, scallion whites, panko and a large pinch of salt and pepper.


Form mixture into golf ball-sized meatballs — we prefer smaller meatballs so that’s what I did. Place the meatballs on a lightly oiled baking sheet and into that  400° F oven they go for 13-15 minutes until cooked through.


In a small bown, combine 1 teaspoon corn starch and 1/4 cup water to make a slurry.

Heat a small pan over medium heat and add 3 tablespoons soy sauce, 1 tablespoon honey and 1 tablespoon hoisin sauce and whisk to combine. When it starts to bubble, whisk in the slurry and cook until thickened.
